I can’t believe summer is over! Well, it officially ends this coming weekend. I bid my farewell to summer by sharing one of my favorite summer salads inspired by the Indian Road Cafe, a restaurant here in NYC. This salad is super healthy and yummy. Bon appétit!
Ingredients
Mixed greens salad
small Frisée salad
Green bell peppers
Spanish olives
Asparagus
Strawberries
Pear
Small avocado
I small pack of Perdue Fit & Easy Breast Tenderloins (99% fat free)
Season the chicken with salt and pepper. I occasionally add a teaspoon of honey. To a medium skillet, add a teaspoon of olive oil and the seasoned breast tenderloins and cook at medium heat. Once the chicken is almost done add your asparagus cook it for about a minute.
For the salad dressing: combine balsamic vinaigrette, olive oil, mustard, honey, black pepper, McCormick’s salad supreme, McCormick’s Lemon and pepper and a splash or apple or orange juice.
