Easy Healthy Recipe: Fish Tacos

If you are a working parent, getting dinner on the table in no time can be a challenge, especially after a long day at work. Here is a super simple dinner recipe that is full of flavor and healthy. It takes less than 30 minutes to put together. You will need the following ingredients:

Tortilla: Flour tortilla (you can use corn tortillas if you prefer)

Fish: I recommend using a good firm fish such as cod, tilapia, or halibut. I used tilapia fillets. Lightly season the fish with salt, and cayenne pepper bake in the oven for about 20 minutes. The fish is cooked when the inside is opaque and it flakes easily.

Filling : spinach toss

Combine fresh spinach with thinly sliced carrots, goat cheese, and add some balsamic vinaigrette (I opted for Marie’s) and toss. You can also add toppings if you choose (avocado, thinly sliced radish, sliced cabbage, scallions, basically add whatever you like!) I skipped the toppings this time.

Assemble your taco. This is a great, healthy evening meal option that is full of flavor and a nice level of heat thanks to the cayenne pepper . I can’t wait to make it again.
